This recipe is originally came from...somewhere. I actually cannot find the website where I found it, but it was written out to make 4 single portion servings in foil packets. The recipe was quite intriguing, so I decided I would try it out for teacher lunch. The results blew my expectations away! I got more feedback on this dish than any other dish to date! 5. Add the diced tomatoes, chicken stock and bay leaves. Stir to combine. Bring to a boil, then reduce heat and simmer 30 minutes. At this point you may choose to add pasta and cook until al dente (barely cooked), but I just cooked mine separately to ensure it didn't get overcooked.</div>

Another teacher lunch recipe! I've never made this, but it's always a crowd pleaser. I decided to try out the recipe in the Puffy Muffin cookbook I have (p.80), since that is one of their signature dishes and the results were AMAZING! So some of my favorite recipes are the ones that are <i>semi</i>-homemade. Box cakes, jello mixes, mac n cheese, etc. etc. It's nice to take something simple to the next level. I had been on the hunt of a good "scalloped potato" recipe since they often go on sale for less than a dollar, and this one might just be a keeper! I made it for teacher lunch, so I quadrupeled it (which is why the pictures look like there is WAY more than what the recipe calls for. 1. Heat oil in large stock pot over medium heat. Add the onion and using kitchen shears, cut turkey bacon into pot. Cook 5-6 minutes or until the onions soften (not brown).</div>

2. Add the flour and cayenne. Cook 2-3 more minutes, stirring continuously until the flour coats the onion and starts to stick to the pot (without browning). You may need to decrease the heat.</div>

4. Cover and simmer 15-20 minutes or until the potatoes are tender.</div>

Another....Pinterest find! I am a sucker for "puppy chow" or as most people know it, "Muddy Buddies". When I saw this recipe, I KNEW I had to give it a try. The fact that it was also gluten-free made it a plus since I have a couple friends with allergies to gluten. These didn't taste quite the same as puppy chow, but they were still quite yummy! I've been dying to try it, so I gave it a go for my Christmas cookie bake-a-rama. These were actually VERY close to the real thing and I was SO excited and surprised! The only difference is that these cookies are very cake-y and don't have a crispy outer layer, like the Disney cookies do. I think I used light butter or margarine, so that might have effected the texture too. Either way, these are a must make if you love Disney World sugar cookies! My grandma (who is an AMAZING cook) came in town yesterday and I had the privelage of cooking for her in my own home. This was something I stressed about for weeks since I have never had the honor to do this! I went round and round about what I would cook and settled on some reliable desserts, but then a new one to try. This was my new recipe to try! Namely, after I started mixing I realized I didn't have quick oats. Not sure how much this effected the outcome, but I read that quick oats are a waste of time anyway, so I just used Old Fashioned. I also had the problem of way too much topping. That is up for debate as I feel like you can never really have too much topping, but ya. Finally, the apples were a bit mushy. My grandma suggested that if I wanted more crisp apples to throw in some Macintosh, though she assured me she enjoyed the mushiness. :-) Now for the recipe!</div>

I only recently stumbled upon lentils. For the longest time I thought they were these weird green things (I think I thought they were leeks), but then I discovered they are a powerhouse legume and nice and low in fat! I made an entire bag of them (yes, they are also cheap!) and played around with them. I made some stuff tex-mex peppers, but I was dying to try them in a chili. This was the first recipe I used my immersion blender with. I am obsessed with tomato soup, so I just had to try it out on my own! I love how easy and low cal this recipe is. I found a recipe that had other flavors and let me tell you, this is definitely a keeper! * 1 cup sugar</div>

* 1 1/2 cup water</div>

* 1.5 liter Red Rose</div>

* 1.5 liter Merlot</div>

* 2 cups Blackberry Brandy</div>

* 1 orange</div>

* 1 lemon</div>

* 2 cups blackberry</div>

<b><i>Directions:</i></b></div>

1. Make simple syrup by combining sugar and water in a saucepan. Bring to med/high heat just until all of the sugar dissolves. Set aside until syrup cools.</div>

2. In a large punch bowl combine wine and brandy. Squeeze orange and lemon and add peel to sangria. Squeeze lime, but throw away rind. Pour in blackberries.</div>

3. Add simple syrup and let sit overnight.</div>

4. Just before serving pour Sprite (or 7up Ten, Sprite zero, etc.)</div>

*I made an ice ring with lemonade to melt in. It ended up being too sweet, so to balance it out, I added more wine and it was fine.</div>
